Recipes: Easy Energy Balls

These snowballs will give you a burst of energy during your busy days. Keep these nutritious flavor bombs in your freezer, and grab one when you need it! 

1 ripe banana 

1 1/2 cups old-fashioned oats

1/4 cup almond butter

1/4 cup honey

2 tablespoons chia seeds

1/2 teaspoon vanilla sugar or vanilla extract

A pinch of kosher salt 

1/4-1/2 cup confectionery sugar

Combine all the ingredients besides the confectionery sugar in a medium-sized bowl. Mix well until all the ingredients are well incorporated. Add a bit more oats or almond butter if the batter is too wet or dry. Keep in the refrigerator for a half hour before forming into tablespoon-sized balls. Roll in the confectionary sugar. Keep refrigerated for up to three days, and keep frozen for up to three months.
