Culinary Corner: Broiled Roast with Sweet and Spicy Pickle Relish

I love the simplicity of good meat. It doesn’t require more than salt and pepper. This sweet and spicy relish is the only way to dress up and elevate the meats!

 

Flat iron steak or deveined split minutes roast

2 teaspoons kosher salt

1 teaspoon black pepper

3/4 cup sliced gherkins

2 teaspoons sugar

1 teaspoon Dijon mustard 

1 teaspoon crushed red pepper flakes 


1: Coat the steak with oil and seasoning with salt and pepper. Broil hi for ten to twelve minutes each side. Allow it to rest before slicing

2: Combine the gherkins, sugar, Dijon mustard, crushed red pepper flakes. Pulse in the food processor a couple times until slightly chunky
